In 1986, Janet Sawyer-Gerber opened La Casita in Colorado Springs with a simple hope: to serve food that felt like home. Over the years, she added two more location, a place where families gather, traditions grow, and handmade tortillas warm more than just the plate.

For 40 years, La Casita has been woven into the rhythm of the Pikes Peak community. Generations have worked here, celebrated here, and shared meals that taste like someone still cooks with pride. The recipes remain true. The quality ingredients stay fresh. The hospitality feels like family.
